Fresh Pasta with Ragu Recipe

Fresh Pasta with Ragu Recipe To prepare pasta at home, by yourself can be really relaxing, especially if you accompany it with a good homemade ragu. It takes a little time, more than preparing usual meals, but the result is a special and unique first dish ( Fresh Pasta with Ragu Recipe ).

400g - all

4 - eggs


500g - beef, chicken, lamb, etc minced meat

1 - medium onion, minced

2 - medium carrots, minced

- fresh minced parsley

5 - large ripe tomatoes, or tomato paste

2 - garlic cloves

1 - rosemary bunch

1/2 - cup red wine

- extra virgin olive oil

- handful fresh basil, coarsely chopped

- salt and pepper to taste


To make the pasta dough, mix all the ingredients into a large bowl by hand, and knead with your hands into a floured surface, until it becomes an homogenous and smooth dough. For into a ball, cover and allow to rest for 30 minutes. Roll out thinly according to the machine instructions, and using the cutter attachment cut into tagliatelle. Wash, peel and finely chop all the vegetables. Heat the olive oil into a pot (medium heat), add the garlic cloves and rosemary, let brown for 2 minutes and remove from oil. Add all the chopped vegetables and cook until they' ve started to soften then add the meat. Cook over high heat, until lightly brown, but not burned and stir in the wine. Let cook until it evaporates, add the tomatoes or tomatoe sauce, season with salt and pepper as necessary and let it cook for about 2 hours, over a really low heat. Bring a large salty pot of water to the boil. When water boils, cook the pasta AL DENTE, drain well and add it to the ragu. Serve immediately with some fresh chopped basil if you prefer and grated Parmesan cheese.
