Spaghetti alla Carbonara Recipe

Spaghetti alla Carbonara Recipe is an authentic and healthy Italian pasta dish, based on eggs, cheese, bacon, pepper and cream. The secret of spaghetti alla Carbonara is to avoid egg to coagulate, and serve immediately as you remove from heat. To prepare this tasty pasta dish is usually used spaghetti, but you can use any other kind of long pasta, as linguine, tagliatelle, bucatini, vermicelli, etc.

500g - spaghetti

4 - eggs

150g - diced smoked bacon

1 - onion, finely chopped

1 - garlic clove

200ml - cream

1 - cup grated Pecorino / Parmesan cheese

- sal and ground black pepper to taste


Pour abundant water in a large deep pot, salt (it should taste like seawater), cover and bring to a boil. When the water boils drop the spaghetti and cook for 7-8 minutes, or until “al dente”. As spaghetti cook we can prepare the other ingredients. Place a saucepan over medium heat and pour the olive oil. Heat the oil, add garlic clove and brown for 2 minute, then remove from oil. Add and brown the chopped onion for 2 minutes. Add the diced bacon and cook for 5 minutes. Remove from fire. In a bowl combine the eggs, the cream, the cheese and beat with a whisk until completely mixed. Season with salt and pepper. Drain pasta and put it in the pan where we cooked the bacon, add the eggs and cream mixture and cook all for 2 minutes over high heat. Remove the pan from fire and serve immediately.
