Salmon and Asparagus Pasta Recipe


Salmon and Asparagus Pasta Recipe is a great occasion for them love salmon and asparagus. You can prepare it for your family and when you have guest for dinner, as well. It' s a lovely first dish, simple and fresh flavor and doesn' t requires a lot of time to prepare. This pasta can be prepared without asparagus if you prefer, it depends only by you.

INGREDIENTS


300g - pasta ( spaghetti, linguine or tagliatele )

150g - smoked salmon, sliced

1 - small bunch asparagus

1 - lemon zest

1/2 - lemon juice

1 - small onion or shallot

50g - butter

4 - tablespoon white wine or water

6 - tablespoons cream

- salt and pepper to taste


DIRECTIONS


Trim asparagus and with a knife diagonally cut into 3 cm thick slices. Reserve some asparagus tips. Peel and finely chop shallot. Cut smoked salmon into strips ( set aside 1/4 of it to garnish ) . ( Finely grate 1 lemon zest and squeeze 1/2 lemon, but this is optional. ) Place a large frying pan over medium heat, melt half of the butter, add the chopped shallot and brown just for 2 minutes. Add asparagus, sprinkle with wine and 3-4 tablespoons water and cook for 5 minutes, stirring, until softened. Then add the smoked salmon, stir in cream and  lemon zest. Stir occasionally, until lightly thickened, about 5-7 minutes. Season with salt ( attention because the smoked salmon is salted ) and ground black pepper. Stir in lemon juice (optional) and remove from heat. Cover and keep warm until pasta cooks. Place a pot with abundant salted water to a boil, and when water boils add pasta and 1 teaspoon oil. Cook pasta AL DENTE, stirring occasionally. When pasta cooks drain in a colander, reserving 4 tablespoons pasta water. Add pasta to sauce with salmon, cream and asparagus. Replace all over high heat, add the reserved pasta water and cook just for 2 minutes, tossing carefully. Add more remaining pasta water as needed if mixture becomes dry. Place Salmon and Asparagus Pasta into individual serving plates and serve immediately. Garnish with the reserved smoked salmon and asparagus tips. Accompany with a white wine.
