Penne with Beef Ragu Recipe

INGREDIENTS


500g - penne pasta

2 - cups beef pulp

1 - cup minced pork meat(optional)

1 - cup diced baked ham

5 - cups tomatoes sauce

2 - onions, chopped

2 - carrots, finely chopped

2 - celery ribs, finely chopped

2 - garlic cloves, minced

2 - tablespoons freshly minced parsley

1 - bay leaf

1 - tablespoon freshly minced rosemary

1 - cup extra virgin olive oil

1 - cup red wine

2 - cups water or beef broth

½ - cup grated Parmesan cheese

- salt and freshly ground pepper to taste


DIRECTIONS


In a large deep skillet heat the olive oil over low-medium heat, add all the minced vegetables, stir for 3-4 minutes and cook for 20 minutes, until the vegetables are tender. Add the garlic cloves, the minced parsley and cook for 3 minutes, stirring continually. All should result lightly brown but not burned.Add the beef pulp, brown over high heat, for 5 minutes until lightly brown, add the bacon and cook for 2 minutes. Then pour the red wine and stir until it evaporates. Pour the tomatoes sauce, the bay leaf, the minced rosemary, salt and pepper. Cover, bring to a simmer and cook over low heat for 1 hour. If the ragout results too concetrated, add water or the beef broth. Cook the beef ragu for about 1hour 30 minutes, covered on low heat, until beef is tender. Bring a pot with abundant salted water to a boil and cook the pasta( stirring occasionally to prevent sticking, according to the package directions or AL DENTE ( remove from fire 1-2 minutes before package directions). Drain, place in a large warm serving bowl, add the beef ragu, and stir in to combine. Sprinkle with the grated cheese and serve immediately.
