Pasta with Shrimps and Zucchini Recipe

Looking for a freshy, tasty pasta recipe? Try this Pasta with Shrimps and Zucchini Recipe, prepared a special kind of pasta called Maltagliati, but you can use any other kind, which you more prefer. It is accompanied with a really enjoyable sauce prepared with shrimps, zucchini, cherry tomatoes... Perfect for these autumn days.

400g - pasta

300g - shrimps, cleaned

2 - zucchini

3 - tablespoons extra virginolive oil

30g - butter

1/2 - glass white wine

600g - cherry tomatoes or tomato sauce

1 - small chilli pepper

- freshly minced parsley

- grated parmesan cheese ( optional )

- salt to taste


Wash, clean and slice zucchini. Place a large frying pan over medium heat, pour in the olive oil, add butter and zucchini. Cook just for 3-4 minutes, add the white wine and cook until tender and wine evaporates. Add the half-sliced cherry tomatoes and continue to cook for other 5 minutes. Meanwhile boil shrimps i boiling salted water for 3 minutes. Drain, and add to the pan together with the crumbled chilli pepper. Boil pasta in the same pot where you cook shrimps if possible and cook al dente. Drain pasta, add to the shrimps-zucchini sauce and cook just for 2 minutes over high heat. Sprinkle with some freshly chopped parsley and serve immediately.
