Pasta with Roasted Vegetables and Saffron Recipe

Pasta with Roasted Vegetables and Saffron Recipe is a first healthy dish, tasty and light, perfect to enjoy warm or cold. This kind of pasta is prepared with various healthy grilled vegetables and colorful saffron. If you prefer you can add lightly roasted cherry tomatoes and cubed feta cheese.

500g - short pasta ( penne, rigatoni, etc )

1 - large red pepper, seeded

1 - yellow pepper, seeded

1 - large eggplant

2/3 - cup extra virgin olive oil

1 - teaspoon saffron

2 - tablespoons freshly chopped parsley

- salt and pepper


Chop the yellow and the red pepper into bite-sized pieces. Heat a grill, fry the peppers until tender and lightly brown, remove from grill and peel. Cut the eggplant into medium cubes and grill for some minutes (both sides) . Remove from grill. Bring a large pot of abundant salted water to a boil and add the pasta. Cook according to package directions or AL DENTE, stirring again and again. SPRINKLE A LITTLE OIL IN WHEN PASTA COOK, IT DOES NOT ALLOW PASTA TO STICK. Drain pasta, place in a warm pasta bowl and toss with the roasted vegetables, saffron, olive oil, chopped parsley, season with salt and pepper. Serve immediately.
