Pasta with Pesto Recipe


Looking for and easy-fresh pasta recipe? Pasta with Pesto Recipe is one of them, prepared with basil leaves, pine nuts, garlic, cherry tomatoes and extra virgin olive oil. The word PESTO derives from Italian language, 'pestare' which means to mash, and this kind of pasta is very used in Italy and all over the word because can be prepared in just a few minutes but above of all has the advantage to be fresh. This sauce is perfect for vegetables parmesans, lasagne and any other kind of pasta.

INGREDIENTS


500g - pasta, spaghetti

250g - cherry tomatoes or red ripe tomatoes

50g - fresh basil

50g - almonds or pine nuts

- parmesan cheese

- extra virgin olive oil

1 - garlic clove

- salt and pepper to taste


DIRECTIONS


Firstly prepare the pesto sauce: Peel almonds, remove skin. Place a pot with water to a boil, pour the tomatoes and boil just for 3-4 minutes. Remove boiled tomatoes from heat, drain and allow to cool, so you don' t burn your hands. When they' re cool remove the skin. As you prepare the pesto sauce place another pot with abundant lightly salted water to a boil, and before draining pasta, reserve just 2 tablespoons of this liquid to use for the sauce. If you have a marble mortar and wish to use it, put garlic, nutmeats, basil and salt in it and grind the mixture, firmly crushing the ingredients against the sides of the mortar, rather than striking sharp blows with the pestle. When the mixture is ground, add the cheese, a bit at a time, continuing to grind, and when it is all worked in, add the oil in a slow stream, stirring with a wooden spatula. The resulting pesto should be homogenous, smooth and creamy. If you don' t have one, prepare the pesto with a food processor, in the same order as with the marble mortar. Then cut the semi-boiled tomatoes into small pieces, put into the food processor and mix until all becomes a creamy structure. Mix the pesto with tomato sauce until smooth, pour in 2 tablespoons of the reserved pasta liquid, season with salt if necessary, and sprinkle with a little extra virgin olive oil. Mix well all the ingredients to combine.  Drain spaghetti AL DENTE (remove from heat 1-2 minutes before package directions), pour in the prepared pesto sauce and serve immediately. Accompaniment with a red wine would be perfect.
