Pasta with Mussels Recipe

Pasta with Mussels Recipe is a so easy and elegant first dish to prepare especially during hot summer days. Breadcrumbs give it a special taste and elegance. This plate works very well with clams, too.

1 kg - mussels, cleaned

300g - spagheti, or short pasta

200g - ripe large red tomatoes

100g - Parma Ham, diced

1 - shallot

1 - garlic clove

1/2 - cup breadcrumbs

4 - tablespoons extra virgin olive oil

2 - tablespoons white wine

- salt and pepper to taste


Clean, wash mussels over cool water and then place them into a pot with cool sated water. Let rest for 1 hour. Drain, and place into a large frying pan (high heat) with 2 tablespoons extra virgin olive oil and the white wine. Cover and cook until all mussels open. Discard those mussels which didn' t open, pod 2/3 and leave the remainging for decoration. Filtrate mussels liquid. Clean, wash and pat dry tomatoes. Cut them into finely slices. Toast breadcrumbs for 2 minutes over high heat with 2 tablespoon extra virgin olive oil. Finely chop shallot and brown it with the diced ham into a large frying pan with the remaining olive oil. Add sliced tomatoes and cook over high heat foe 3 minutes. Pour in the reserved mussels liquid and cook until sauce is thick. Season with salt as necessary and add all mussels. Place a pot with abundant salted water over heat and when water boils, cook pasta until AL DENTE. Drain in a colander. Pour pasta into a large bowl, add the toasted breadcrumbs and then the mussels sauce. Mix well and carefuly to combine. Transfer Pasta with Mussels and Breadcrumbs into a large aluminum foil, close well and place in a baking dish. Preheat oven to 250°C  and bake paste for 5 minutes. Remove from oven and serve immediately.
