Pasta with Broccoli Recipe

Even they who hate vegetables can' t resist to this easy Pasta with Broccoli Recipe, made with tender broccoli florets, smoked bacon, toasted breadcrumbs and grated Parmesan/ Pecorino cheese.

300g - broccoli crowns

300g - short pasta, such as orecchiete, penne or rigatoni

200g - thinly sliced smoked bacon, small dice

4 - dried tomatoes, or fresh cherry tomatoes

1 - red chilli pepper

1 - garlic clove

80g - grated Pecorino/ Parmesan cheese

5 - tablespoon extra virgin olive oil

- salt to taste


  Bring a large pot of abundant salted water to a boil over high heat. Once the water boils, add the broccoli and cook until tender, about 4-5 minutes. Prepare an ice water bath by filling a bowl halfway with ice and water. Using a strainer, remove the broccoli and plunge in the ice water bath. Return the cooking water to a boil, to cook pasta. Cook the pasta AL DENTE. As pasta cooks, place a large pan over heat, add the olive oil, the garlic clove, brown for 2 minutes. Eliminate garlic. Add the chilli pepper, (crumbled), the smoked bacon, cubed tomatoes, boiled broccoli crowns, season with salt and cook for about 4-5 minutes. Drain the pasta in a colander. Mix all the ingredients into a large bowl and cut 4 parts of baking or aluminium paper with scissors. Divide all into 4 parts and place in each baking paper. Spread with the grated cheese and close very well. Preheat oven to 250 Degrees C. Transfer into a baking tin and let cook for 10 minutes. Remove from oven and serve immediately. This pasta dish could be accompanied with a red wine.
