Pasta with Artichokes and Smoked Bacon Recipe

Bacon Pasta with Artichokes and Smoked Bacon is the perfect recipe for a first dish, ideal to prepare to prepare during spring days. Cooked with some red hot chilli pepper and truffle cream, the recipe is totally realised.

500g - pasta (spaghetti or linguine

4 - artichokes hearts

200g - diced smoked bacon

1 - garlic clove

1/2 - small onion

1 - small red hot chilli pepper, crumbled

50g - truffle cream

- extra virgin olive oil


Clean artichokes: Using a large sharp knife, cut off and discard the top 2/3rds of the artichoke. Rub the cut end of the artichoke with lemon, to keep it from discoloring. Trim the outer leaves, keep removing the tough leaves till you get to the paler, softer leaves on the inside. When there are about 5-6 layers of leaves left, stop trimming. Then trim the outer, tough, green stuff around the base of the artichoke and around the stem. When you got to the white part, stop trimming. Rub the lemon everywhere you have cut, so artichokes mantain their natural green colour. Using a teaspoon, very carefully scoop out the fuzzy choke ( make sure you remove all the choke because this part is inedible) from the center. Now that we have only artichokes hearts, slice finely and place them in a bowl of water with lemon juice. Put a pot with abundant salted water over heat, and when water boils, add pasta. Place a large pan over medium heat, pour in 4 tablespoons extra virgin olive oil, add garlic clove and the crumbled chilli pepper. Brown garlic for 1 minute and remove from pan. Add the sliced onion and diced smoked bacon, cook for 2-3 minutes until lightly crispy. Finely slice artichokes hearts, pour in the pan and brown just for 2-3 minutes. Add 4-5 tablespoons pasta water, cover and cook for 5 minutes. Cook pasta AL DENTE, drain and add to the artichokes sauce. Cook over high heat for 1-2 minutes, add truffle cream, mix well and carefully in order to combine. Serve Pasta with Artichokes and Smoked Bacon into individual serving plates accompanied from a Red Wine.
