Pasta with Artichokes Recipe

400g - short pasta (maccheroni, rigatoni, penne, etc

4 - medium artichokes hearts

1/2 - onion, peeled and finely chopped

1 - garlic clove

80g - grated Parmesan cheese

1/2 - cup white wine or water

1/2 - cup extra virgin olive oil

- salt and pepper to taste


Place a casserole over medium heat, pour in the extra virgin olive oil, add the garlic clove and the chopped onion. Roast gently and then add the artichokes hearts, finely sliced. Let all insaporite for 4-5 minutes and add the wine or water, which liquid you like most. Season with salt and pepper and cook for 5-10 minutes, until artichokes are tender and the liquid evaporates. As artichokes cook, prepare pasta. Cook it AL DENTE into a pot with generous salted water. Drain pasta in a colander and transfer it in the pan with the artichokes. Cook just for 2-3 minutes, toss carefully, add the grated Parmesan cheese, mix all to combine and serve immediately. You could accompany this delicious dish with a white wine.
