Integral Pasta with Zucchini Recipe

500g - integral pasta (fusilli, penne, etc)

2 - large onions, thinly round sliced

3 - large zucchini, diced

1 - cup grated Parmesan cheese

1/4 - teaspoon red chili pepper flakes

2 - tbsps freshly chopped basil

3/4 - cup extra virgin olive oil

4 - tbsps cold water

- salt and pepper to taste


Bring a large pot with abundant salted water to a boil. Heat olive oil in a large pan over medium heat, brown the sliced onions, add the red chili pepper flakes and cook for about 2 minutes. Add the cold water and cook over low heat, until it evaporates. Add zucchini and cook for 15 minutes, until tender. Season with salt and pepper and remove from fire. When water boils, add pasta and cook Al Dente( 1 minute less then the package directions). Drain in a colander and pour the hot pasta into the pan with the mixture. Toss over high heat for one minute to mix. At last add the grated Parmesan cheese, the freshly basil and toss again. Place all into a serving plate and serve immediately.
