INGREDIENTS


3 - mandarins, peeled

1/2 - 1/2 cup mandarin juice

3 - mandarin grated zest

2 - tbsps mandarin liquor

60g - sugar

3 - egg yokes

2 - cups cream

1 - tbsp unflavored powered gelatin, softened in 1 /2 cup colt water

- candied cherries to garnish

- freshly mint leaves


DIRECTIONS


In a large bowl whip together sugar and the eggs yoke, add the mandarin juice and the grated crust. Place the mixture in a pot and cook in water-bath for 10 minutes, till the cream becomes smooth and creamy. Add the softened gelatin, the mandarin liquor , stir carefully and cool. Beat cream until smooth and add 2/3 to the mandarin mixture. Transfer all into cupping glasses and place in fridge for 2-3 hours. Garnish with the remaining cream, the candied cherries, the mint leaves and serve immediately.
