Fresh Fruit Birthday Cake Recipe is a little long but very enjoyable recipe, perfect for special occasions, like birthdays. It is made with 3 layers sponge cake (to see this recipe click here: How to cook and prepare: Sponge Cake Recipe), which is egg based and quite plain in flavour, with a fresh custard ( to see this recipe click here: How to cook and prepare Custard Recipe ) and fresh fruits. If you don' t have time to prepare the sponge and custard, you can buy them ready-packed in the supermarket.

INGREDIENTS


1 - ready baked sponge cake

500g - custard

- fresh fruits (strawberries, kiwi, blueberry bake, small clementines)

- chopped walnuts

- orange juice or sugar syrup

- spray cream to decorate


DIRECTIONS


Take the ready baked sponge and slice the cake into 3 layers. Place the custard in a bowl. Clean, wash and pat dry all the fresh fruit. Slice the kiwi into round pieces and then cut in half, slice the strawberries into finely length-wise pieces (leave inside 5 strawberries to decorate the top of the finished cake), peel clementines and the blueberry bake leave as they are, don' slice. You can use any other kind of fruit if you prefer. Place the first sponge layer into a large serving platter, sprinkle with some orange juice / sugar syrup, lay up with 1/4 custard and begin to lay the fresh fruit ( 1/3 of them) in this order: clementines, kiwi, strawberries and blueberry. Do the same with the other two layers, but the third layer should be decorated more carefully, like in the photo. Decorate each strawberry with spray cream. Give a final decoration by covering the borders of the cake with some custard and the chopped walnuts. Place in the fridge for at least 2 hours, and better if refrigerate all the night.
