Berries Cheesecake Recipe

Berries Cheesecake Recipe is a no bake fresh and tasty dessert made with a crispy biscuits base topped with cream cheese and mixed berries fruits. This cheese cake is prepared only with berries fruits but if you prefer you can substitute them with any other fruit, as peach, cherries, strawberries, etc. The biscuit base is really tasty, but be careful to butter - cookies quantity, they must must in proportion to prevent crumble.

Biscuits Base Ingredients

200g - wheat biscuits

80g - melted butter

2 - tablespoons cane sugar

Topping Ingredients

200g - fresh creamy cheese ( philadelphia )

500g - cow's milk ricotta

2 - teaspoons icing sugar

1 - teaspoon vanilla extract

12g - isinglass (gelatin)

400g - fresh soft fruits

50ml - cherry syrup

2 - tablespoons white sugar


Firstly prepare the biscuits base: melt the butter on very low heat, place biscuits in a food processor and crush finely. Place the crushed biscuits into a bowl, add the melted butter, cane sugar and mix well until all becomes a homogenous structure. Cover a round baking dish with a baking paper and pour the mixture in, press well with your fingers to obtain a uniform layer. Place in the fridge for 1 whole hour as you prepare the creamy cheese topping. Mix well ricotta with philadelphia cheese in the food processor, place the mixture in a bowl, add icing sugar and vanilla extract. Place the isinglass in a small bowl with cool water and passind 10 minutes, drain well with your hands and add to the cherry syrup which you have warm before. Combine well and add this gelain mixture to the creamy cheese mixture. Clean and wash 100g berries, cut into small pieces and add to the mixture. Spoon filling mixture into biscuits crust and place in the fridge for at least 5 hours, or better overnight. Before serving remove cheesecake from the baking dish, place into a beautiful serving plate and top with the fresh berries. You and add berries simple as they are or cook them just for 5-10 minutes over low heat adding 3 tablespoons white sugar and 3 g softned gelatin. Cook until soft fruits create a juicy mixture. Top the cheesecake, let berries cool and replace in the fridge until you serve it.
