No Bake Yogurt Cake Recipe

This cake is fresh and delicate, can be prepared simple just in this recipe, or topped with fresh fruits, fruit jelly or chocolate sauce that will enhance the flavor. This no bake, cold yogurt cake can be a great moment of pleasure for young and old.

Biscuit base Ingredients

300g - digestive biscuits

2 - tablespoons cane sugar

180g - unsalted soften butter

Yogurt Cream Ingredients

700g - natural yogurt

300ml - heavy whipping cream

6 - tablespoons milk

12g - gelatin

50g - white sugar


Lightly butter and cover with baking paper a spring form cake pan. Place biscuits in a food processor and pulse until fine crumbs form. Add the melted butter and pulse again to combine. Transfer the biscuits mixture in the spring form cake pan, press well with your fingers and refrigerate until you are preparing yogurt filling. Place gelatin into a small bowl with cold water and set aside for 10 minutes. Meanwhile, in a bowl mix together yogurt, white sugar. Whip well the heavy cream and add it to the yogurt mixture. Mix well. Remove gelatin from cold water, drain well with your hands and add to the warm milk. Dissolve it over very low heat, mix well and add the yogurt mixture. Mix all the ingredients to combine. Pour the yogurt filling over biscuit base, cover the pan with a cling film and refrigerate foe at least 4 hours or better over night. Before serving, run a thin sharp knife around the sides of the cake and carefully remove the cake ring. Decorate with fresh fruits if you prefer and serve immediately.
