Easy Chocolate Coffee Cake Recipe

Looking for and easy, tasty, no bake and frozen cake? Try this Easy Chocolate Coffee Cake Recipe, prepared with a biscuit crust, creamy cheese filling, coffee and dark chocolate drops (or Nutella cream), ingredients which all of us have at home. This frozen chocolate coffee cake is perfect for both chocolate lovers and coffee ones too. The creamy cheese filling and dark chocolate pieces gives it a pastry shop touch. You can serve this cake as a birthday cake or for a sunday dinner with your friends.

Crust Ingredients

350g - cacao biscuits

150g - cream biscuits

130g - unsalted softened butter

1/2 - teacup coffee

Filling Ingredients

500g - heavy cream

500g - mascarpone cheese

200g - icing sugar

2 1/2 - cup milk

1 - tablespoon coffee powder

7g - gelatin ( isinglass )

- Nutella or dark chocolate to decorate


Firstly prepare the biscuits crust: In a mixer mix not very finely cacao and creamy biscuits. Place a small pot over gentle flame and melt the butter with the coffee, let rest until butter-coffee mixture is lukewarm and add to the minced biscuits. Lightly butter and cover with a baking paper a round cake dish, place in the biscuits mixture and for the crust using your hands, pressing well and carefully. Place in the fridge for 30 minutes. Place the gelatin in a small bowl with cool water and let there for 10 minutes. In a planetary or with an electric mixer whip the heavy cream, sugar, add mascarpone mascarpone cheese and 2 glasses of milk, mix well. Remove gelatin from cool water and melt with the remaining milk just for 15 seconds over very heat. Let it rest until warm, and add to the creamy mixture that you prepare. Mix well all the ingredients, until there's formed a smooth and creamy mixture, spread all over the biscuits crust and replace in the fridge for at least 4 hours, or better overnight. Before serving decorate with dark chocolate drops or melted nutella.
