Lemon Almond Cookies Recipe

250g - almonds flour

50g - fine white sugar

5 - whites egg

75g - all

100g - unsalted butter, softened

1 - freshly grated lemon zest


Dissolve the sugar in water-bath and gently whisk the whites of the egg. Into a large bowl combine almonds flour, the dissolved sugar and all-purpose flour. Add the softened butter, the whisked whites of the egg and the freshly grated lemon zest. Knead with your hands all the dough until it is well- combined. Give it the form of a ball, cover with a plastic wrap and let rest in the fridge for 1 hour. Then enlarge the dough and with cookies forms make all the cookies, or in alternative dip the bottom of a glass in sugar and with it press down the cookies, flattening them to about 2 cm in diameter. Preheat oven to 180 Degrees C. Place Lemon Almond Cookies on a lightly greased baking sheet, and bake them in the middle of the oven for about 15-20 minutes, or until they're golden around the edge. Remove from oven, transfer to racks and let them cool.
