Filled Biscuits Recipe

Are you looking for something sweet and yummy to accompany your breakfast with a cup of warm milk, or hot tea? These Filled Biscuits are perfectly ideal, crusty outside and creamy inside, made with shortbread, honey, chocolate, walnuts and citrus grated zest.

Shortbread Ingredients

400g - all

200g - sugar

1/4 - teaspoon salt

150g - softened butter

2 - eggs

Filling Ingredients

200g - walnuts, minced

2 - tablespoons chocolate cream

2 - tablespoons honey

2 - tablespoons fresh grated citrus zest

- powdered sugar


Prepare the shortbread dough: combine together flour , sugar , salt. Then add the cubed softned butter and eggs . Knead all with your hands into a floured surface, until the dough becomes elastic, omogene and smooth. Divide shortbread into 2 balls, cover each with plastic wraps and let rest in the fridge for 30 minutes. Passing this time enlarge shortbread balls into a clean surface and with a biscuits form or just with a glass, form as many  dough disks as you can(10 cm diameter).  Mince the walnuts, mix with honey. Transfer walnuts mixture into 4 shortbread disks, chocolate cream into 4 other dough disks, and the grated citrus zest (mix them with some honey) into four disks. Close all these filled disks with the other shortbread disks. Close well to the borders with your finger or with a fork. Preheat oven to 180 Degrees c. Place Filled Biscuits into a lightly greased baking paper and bake for about 17-18 minutes, until borders become golden. Remove from oven, and allow to cool on racks. Serve at room temperature and garnish with some powdered sugar if you prefer.
