INGREDIENTS


100g - sultanas

3 - tbsps rum

150g - all-purpose flour

100g - sugar

90g - butter

3 - eggs

4 - tbsps lukewarm water

80g - candied fruit

3 - tbsps Marsala

2 - tbsps grated lemon zes

1 - teaspoon backing powder

- butter for the stamp

- salt


DIRECTIONS


Preheat the oven to 180 degrees C. Place sultanas into the lukewarm water and let rest for 30 minutes. Drain well with a clean kitchen towel. Grease and flour a tube pan. In a bowl, beat the eggs with the sugar, till smooth and creamy. Add the butter, flour, sultanas, the backing powder, the candied fruit, the Marsala and the grated lemon zest. Stir gently, till creamy. Arrange the plum cake into the stamp and bake for about 50 minutes, or until cake tests done. Remove the plum cake from oven and allow to cool in the stamp before serving.
