To prepare grandmother' s cake you will need to prepare two pastry disks witch will be filled with custard cream. INGREDIENTS


Pastry Ingredients

300g - all-purpose flour

150g - softened unsalted butter

100g - sugar

1 - egg

1 - egg yolk

1/2 - teaspoon backing powder

1/8 - teaspoon salt

Filling Ingredients

120g - sugar

5 - eggs

2 1/2 - cups milk

80g - all purpose flour

1/2 - teaspoon vanilla extract

- a small piece of lemon crust

Decorative Ingredients

- pine nuts

- icing sugar


DIRECTIONS


Prepare the pastry: mix together flour, sugar, a little salt and the backing powder. Add the cold butter, diced, the egg and the egg yoke. Knead until the dough is smooth, separate into two unequal parts and roll out into circles. Cover each dough circle with a plastic foil and let rest in the fridge as you prepare the filling. In a large bowl whisk two yoke eggs and 3 eggs with the sugar, a little salt until creamy. Add the flour and stir well. Boil the milk adding the vanilla extract and the small piece of the lemon crust. Remove from milk and add the boiled milk to the egg mixture stirring carefully. Place the mixture over low heat for about 1 minutes. stirring again and again. Remove from fire and let rest, stirring continually until cold. Remove the pastry circles from fridge, take and grease a pan, lay out the biggest pastry circle, pour the prepared mixture. Place the remaining circle of dough over the top and pinch together the edges. Decorate with the pine nuts and bake in the preheated oven to 180 Degrees C, for about 50 minutes. When the cake is lightly brown but not burned, remove from fire and let rest until cold. Before serving decorate with the icing sugar.
