Creamy Apple Cake Recipe


Try this Creamy Apple Cake Recipe, tasty, perfect for a sunday family lunch, prepared with a rich custard cream, apples, all enclosed in a homemade shortbread.

INGREDIENTS


350g - all-purpose flour

220g - sugar

6 - egg yolks

500ml - milk

200ml - fresh heavy cream

90g - butter

3 - egg whites

70g - cornstarch

2 - apples, peeled, seedless and sliced

15g - sliced almonds

1 - grated lemon zest

- brown sugar


DIRECTIONS


Firstly prepare the shortbread dough: cream the butter and 100g of white sugar with a fork until you get the consistency of a cream. Combine 1 whole egg and 1 egg yolk, mix well and gradually add the sifted flour. Knead with your hands until you obtain a pastry, give it the form of a ball, cover with a plastic wrap and let rest in the fridge for about 30 minutes, until you prepare the other ingredients. Meanwhile, pour the milk and the fresh cream in a po, place over heat and at the moment they bring to the boil add the lemon zest and let to enfuse for 10 minutes. Beat the 4 egg whites and 2 yolks with a fork/ whisk, add the remaining sugar, whisk again and then add the sifted cornstarch. Carefully filter the milk-cream mixture and add to the mixture that you have just prepared. Transfer all into a large pot and, stir and place over very gently flame, stirring carefully, again and again with a whisk until you get a thick, creamy texture. Remove from heat and allow to cool stirring again and again. Remove shortbread dough from fridge and roll it out to a 4-5 mm thickness in order to prepared a 24 cm cake tin. Butter well the cake tin, transfer the rolled shortbread, prick gently the dough with a fork on the bottom, pour a thin layer of custard cream, spreading in a uniform way with a spatula. Cover the cream with a thin apple slices layer. Cover again with another custard cream layer and again with the remaining sliced apples, more thick. Spread the sliced almonds in the centre and spread all the cake surface with some brown sugar. Preheat oven to 180° C. Bake the Creamy Apple Cake for about 40 minutes. Once baked remove from oven, allow to cool completely before serving.
