Coconut Pie Recipe

Coconut Pie is a really yummy pie, which you can prepare during all the seasons of the year because is fresh, tasty and not too much expensive to buy its ingredients. You can serve it just by sprinkling some powdered sugar on it, or by spreading one hazelnut cream layer over or orange marmalade and two tablespoons of shredded coconut. The three versions really beautiful to serve.

3 - cups all

1 1/2 - cup white sugar

1 - cup sunflower oil

1 - cup natural white yogurt

1 - cup shredded coconut

3 - eggs

1 - baking powder

1 - vanilla extract

1 - grated lemon zest

2 - tablespoon lemon juice

1/8 - teaspoon salt


In a bowl mix together the flour, baking powder, salt, sugar, shredded coconut, vanilla extract and the grated lemon zest. Mix all these ingredients with your hands. Into another large plastic bowl pour in eggs, yogurt, sunflower oil, vanilla extract, lemon juice and add all the flour mixture. Mix well and carefully all the ingredients with a whisk. Lightly butter a pie shell or place a baking paper and pour the Coconut Pie into.Preheat oven to 180° C. Bake pie for about 40 minutes, or until a a knife inserted in the center comes out clean. If Coconut Pie surface becomes too much brown just cover it with an aluminum or baking paper and continue to bake. In this way pie bake well and doesn't burn. Remove from oven and allow to cool to room temperature. Once cooled you can spread some powdered sugar on it, or with a spoon make a hazelnut / orange marmalade layer and then spread some shredded coconut all over.
