Cherries Cake Recipe

Cherries Cake Recipe is a kind of cake, which could be prepared with fresh cherries or frozen, as well. The cherries keep the cake nice. You can use any other kind of fruit and the result is always the same. For a picnic, make the cherries cake up to 24 hours ahead and return it to the clean tin when cold. Dust liberally with icing sugar, then wrap in cling film or foil.

125g - unsalted butter

1 - grated lemon zest

The first thing to do is to prepare the bread short, but if you don't have time you can buy it to the supermarket. Mix together flour, sugar, baking powder and grated lemon zest. Add egg and the butter and continue to knead with you hands into a floured surface, until it becomes homogenous and smooth. Give it the form of a ball, cover with a plastic wrap and let rest in the fridge for 30 minutes. Preheat oven to 180°C. Enlarge bread short into a greased baking paper and place it into a cake tin. Cover pastry with another baking paper, spread over the surface dried beans. Bake for 15 minutes, remove baking paper and dried beans, replace bread short to bake for other 5 minutes. Remove from oven and allow to cool. Remove the stalks and stones from cherries. If you have a pitter is better because you keep the fruit whole. Place the cherries juice into a bowl. Whisk eggs with sugar, add flour, cinnamon, the cherries juice and the cream. Beat well to make a thick and smooth mixture. Place cherries over pastry surface and scatter the topping over the the cherries. Replace cherries cake in the oven, to 200 Degrees C and continue to bake for other 25-30 minutes, or until a skewer pushed into the centre comes out clean. Remove the cherries cake from the tin (when it's cool enough) and leave on a wire rack until completely cold. ACCOMPANY with a light red wine.
