Cannoli Recipe


Cannoli are a typical Italian Recipe, prepared during all the year especially on Carnavale . Cannoli are prepared with a fried and crispy dough giving it the form of an envelope, stuffed with a creamy filling of ricotta cheese, chocolate chips and cubes of candies. So let's try this tasty Cannoli Recipe.

INGREDIENTS


Dough Ingredients

230g - all-purpose flour

25g - butter, at room temperature

2 - large beaten eggs

2 - tbsps sugar

1 - tbsps cocoa, unsweet

2 - tbsps sweet Marsala wine

1L - seeds oil for frying, or as needed

Filling Ingredients

500g - ricotta cheese

300g - sugar

130g - semisweet chocolate, chopped

1 - teaspoon vanilla

200g - chopped candied citron

- icing sugar


DIRECTIONS


In a medium bowl, mix together 200g flour and cocoa. Make a well in the centre and pour in the sugar, the beaten eggs, the butter and the Marsala wine. Firstly mix with a fork and then knead the dough with your hands on a clean surface. Knead for about 10 minutes, cover and let rest for 20 minutes. Arrange the dough into a lightly floured surface, 3mm thickness. Using a form or a large glass cut out 12 circles, 10cm diameter. Dust the dough circles with a light coating of flour, in order to help you later in removing the shells from the cannoli tubes. Roll dough around cannoli tubes and seal the edges with a bit of egg white. Heat the oil over medium heat in a deep heavy skillet or a deep-fryer. Fry the shells on the tubes for about 5 minutes, until golden. To turn use tongs. When shells are ready, remove carefully using the tongs and place all on a cooling rack set over paper towels. Let cool until you can handle the tubes, then very carefully remove the shells from the tubes by twisting the last ones. To make filling: In a medium bowl stir together the ricotta cheese, vanilla and the sugar, using a wooden spoon. Add the chopped chocolate and the candied citron and mix all the ingredients. To fill the shells use a pastry bag. Fill from the centre to one end and then do the same from the other side. Arrange cannoli into a serving platter, dust with the icing sugar
