INGREDIENTS


1 - ready-packed short pastry

6 - apples. peeled, cored and sliced

180g - sugar

100g - butter

- cream or ice-cream to serve ( optional )


DIRECTIONS


Preheat oven to 220 degrees C. Grease a 25 cm cake tin. Peel, core and slice apples into four parts. Melt the butter in a large pan, add the sugar and cook for 5 min, stirring until the sugar becomes lightly brown but not burned. Add apples and cook over low heat for about 20-30 min on both sides, until golden and tender. Continue to cook over high heat until the sugar liquid evaporates and becomes thick. Remove the apples from pan and arrange them into the cake tin, sprinkling over the remaining sugar cream. Cover with the short pastry and gently fold the border down the apples with a spoon. Bake the apple cake for 30 minutes, until the crust is golden and the apples are tender. Allow to cool before serving. serve warm or at warm temperate with a dollop of cream or ice-cream.
