Almond Rice Cake Recipe

250g - rice

90g - sugar

1 L - milk

80g - almonds, toasted and finely chopped

4 - eggs, whites and yolks separated

1 - grated lemon zest

4 - almond liquor drops

- butter and bread crumbs for the stamp

- sliced almonds to decorate


Place a casserole over medium heat, pour in the milk, add the rice and cook until it is tender. Remove from fire, add the sugar and the grated lemon rind and stir well to combine. Allow to cool and then add almonds and the liquor drops. Add the yolks and then the whites after whisking them with a little salt in a medium bowl. Lightly butter and coat with the bread crumbs a 25 cm round cake pan, add the rice cake, cover with sliced peeled almonds and bake in the 180 Degrees C oven for about 40 minutes, or until a wooded pick inserted in centre comes out clean. Remove from oven and cool rice cake for 10-15 minutes . Cool completely on wire rack then serve.
