Zucchini Pizza Recipe


Try this Zucchini Pizza Recipe; freshly, tasty, light and simple to prepare. This fresh pizza is prepared with homemade dough, fresh zucchini, fresh tomatoes and mozzarella cheese, sprinkled with extra virgin olive oil, seasoned with salt and pepper is perfect for a family dinner. If you prefer, can not pre-cook zucchini before baking pizza in the oven.

INGREDIENTS


Dough Ingredients

500g - all-purpose flour

1 - package dry active yeast

1 - teaspoon sugar

1 - cup lukewarm water

- salt

- flour to powder

Topping Ingredients

2 - large zucchini, sliced 1 inch round

2 - garlic cloves, minced

2 - tablespoons freshly minced parsley

200g - mozzarella cheese

3 - tablespoons extra virgin olive oil

300g - cherry tomatoes, half-sliced


DIRECTIONS


In a large bowl mix the warm water, yeast and sugar. Stir for some minutes, until the yeast dissolves and let set for 15 minutes. Add the flour, salt and 2 tablespoons olive oil into the yeast mixture. Stir for 10 minutes or until it begins to turn into a smooth an elastic dough. Lay out the dough into a lightly floured surface and knead with your hands for some minutes, until smooth and elastic. Place the dough in an oiled bowl and cover with a clean kitchen towel in a warm place to rise until it doubled in size, about 2 hours. Prepare the pizza's filling. Place a large frying pan over medium heat and fry the minced garlic, the zucchini round slices in the olive oil for about 6-7 minutes. Drizzle with the minced parsley, pepper and season with salt. After the leaving time knead the dough again for 1 minute in a lightly floured surface or start stretching dough in the air instead of on a work surface, because gravity will pull and stretch it. Once it's about 30 inches in diameter, place dough on floured work surface and pat it out with your fingertips, from the centre toward the edge, to fully stretch. Gently push your palms into centre of the dough to stretch it toward the edges to make a border, about 2 inch. Transfer the dough into a pizzas hob and before garnishing let it rest for 10 minutes. Lay out the cherry tomatoes, the zucchini, sprinkle with the remaining oil, salt and pepper. Preheat the oven to 250° C and bake for about 30 minutes. Remove from fire and drizzle the shredded mozzarella cheese. Bake for other 5 minutes, or until the cheese is melted and the crust results lightly brown. Remove from fire and serve immediately
