Summer Vegetables Focaccia Recipe


Looking for a fresh and healthy focaccia to prepare in these hot summer days? Summer Vegetables Focaccia is a tasty and really healthy recipe, prepared as the normal focaccia but with a freshly summer vegetables topping, as zucchini, peppers, etc. So, don't hesitate to prepare it, you can take it in a box when going on the beach or during a picnic.

INGREDIENTS


1 - large red pepper without seeds and chopped

1 - tablespoon capers, washed and dried

7g - active dry yeast

800g - all-purpose flour

50g - black pitted olives

2 - cups warm water

1 - garlic clove, peeled

2 - large tomatoes

1 - large yellow pepper without seeds and chopped

2 - large zucchini, round sliced

125g - Parmesan cheese, scaled

- salt and ground freshly black pepper to taste

10g - sugar

4 - tablespoon basil leaves, minced

6 - tablespoons extra virgin olive oil


DIRECTIONS


Mix together yeast, sugar, warm water and let sit for 15 minutes, until the mixture is foamy. Tip the flour into a large bowl and make a well in the centre, add the mixture,the remaining water and salt. Bring the dough together with a spoon then with your hands. It should be soft, smooth but not too sticky or wet. Tip onto a floured work surface and knead for about 10 minutes, or until it's smooth, soft and springs back when pushed with a finger. Put the dough into an oiled large bowl and let it rest for 1 hour ( or until has doubled in size ) in a warm place. Cover with a wet towel or a cling film. When risen, lay out the dough in an oiled pizzas hob and extend it into all over the hob's surface. Let it rise again for other 30 minutes in a warm place. Preheat the oven to 200° C. Chop and salt the tomatoes. Heat 2 tablespoons of olive oil into a frying pan and brown the garlic clove, the zucchini and add salt. Garnish / top the bread dough with zucchini, garlic, peppers( chopped and without seeds), tomatoes, salt and the remaining oil. Bake for 15 minutes and then complete all adding capers, olives, the minced basil and the Parmesan cheese. Continue to bake for other 10 minutes, or until golden and risen. Cool on a rack for some minutes and serve it warm.
