Olive Focaccia Recipe


For all of them who love bread and focaccia, here it is an easy and healthy Olive Focaccia Recipe prepared with bread dough and green olives. You can serve this tasty focaccia as an appetizer or as an accompaniment to soups and stews.

INGREDIENTS


750g - white or whole wheat four

1 - package active dry yeast

2 - teaspoons sugar

1 ½ - cup lukewarm water

200g - green olives, pitted and half chopped

- extra virgin olive oil

- Salt (both kosher and coarse sea salt)


DIRECTIONS


In a bowl mix the yeast, the sugar and the lukewarm water. Set the mixture aside for 15 minutes. In another large bowl pour the flour and mix together with salt, adding gradually the mixture of yeast until the dough results sticky. Then you should lay out and knead it on a lightly floured board, until smooth and elastic. Place the dough in an oiled bowl and cover with a clean kitchen towel in a warm place to rise until it doubled in size, about 2 hours. Transfer the dough in a large oiled baking paper and spread it out into a 30 cm diameter rectangle, making indentations all over the dough surface with your fingertips. Cover and let rise for other 30 minutes, or until doubled in size. Preheat the oven to 200° C. Sprinkle the top with the green olives after lightly salted and oiled the dough surface, pressing with your fingertips and place in the oven. Bake for about 20 minutes or until golden. After baking, cover it with a wire rack for 15 minutes and then serve warm.
