Integral Bread Recipe

Integral bread is rich with fiber, vitamins and minerals, less caloric than the classic bread and recommended for all of them who follow a low calorie diet. Perfect to serve with second dishes accompanied with vegetables, or to serve with soups and stews.

INGREDIENTS


400g - whole wheat flour

250g - all

25g - active dry yeast or 2 sachets of backing power

1 - teaspoon sugar

3 - teacups lukewarm wate

- extra virgin olive oil

- white flour to powdering

- salt to taste


DIRECTIONS


Place the active dry yeast or (the backing power together with the sugar) into ½ teacup of lukewarm water and let it set for 15 minutes. Pour your dry ingredient into a large mixing bowl and add salt, the backing power, the remaining water and stir with hands and/or wooden spoon. After doing that, transfer all into a floured working plan and continue until the dough results compact and elastic. Give to the paste a ball form and cover the bowl with a towel or plastic wrap and let sit at room temperature until the surface is dotted with bubbles and the dough is more than doubled in size ( about 2 h ). After 2 h stir again the dough with hands for about 5 minutes into a working floured surface, forming 2 large loaves. If the dough is tacky, dust the top lightly with wheat bran, cornmeal or flour and with a serrated knife, make some deep engravings (5 mm diagonal). Put down the dough into a large oiled hob and let it increase for another hour, till it will be doubled. If you gently poke it with your finger, it should hold the impression. If it springs back, let it rise for another 15 minutes. Preheat the oven to 220 degrees C and and after 15 minutes put the integral bread to bake( 180-200 ° C ) for about 40 minutes until the bread has a deep chestnut colour but not burned. Remove from oven and let cool on a rack before slicing and serving.
