PREP: 20 min

INACTIVE TIME: 2-3 hours

COOK: 30 min

DIFFICULTY: intermediate

SERVES: 8-10

400g - integral flour

120 g - all

1 - tablespoon dried oregano

1 - tablespoon marjoram

30g - 30 g dry active yeast

2 - cups warm water

1 - teaspoon sugar

- extra virgin olive oil

- white flour to powder

- salt

Mix the dry active yeast, warm water, and sugar together in a large bowl. Set aside for five minutes, or until mixture becomes foamy. Pour the flours, salt, the dried yeast, marjoram, oregano and the remaining water in a large bowl and gradually mix all with hands or a wooden spoon. Then lay out the dough into a floured working surface and knead for about 10 minutes or until it will be smooth and elastic. Place in an oiled bowl, and turn to cover the surface of the dough with oil. Cover with a damp linen dish towel and allow to rise for 2 h or until dough has doubled in size. After this process knead again the dough for some minutes in a floured working plan and form 6 loaves and place them into a greased cookie sheet. Allow to rise again until doubled in size ( about 30-40 minutes ). Preheat the oven to 220° C and after15 minutes put the pan into the oven, to 175° C, bake for about 30-40 minutes, until it comes a deep brown colour, but not burned. Remove loaves from pan and let cool on wire racks for at least 15 minutes before slicing.
