Herbs Focaccine Recipe

Try these tasty Herbs Focaccine Recipe to accompany a meat / fish second dish with vegetables, or for breakfast as well, are very healthy and flavorful. You can serve them immediately as apettizers, or warm as snacks to accompany freshly cheeses or salads. You can use other seasonal herbs or which you prefer to make these focaccine. Also they can be frozen after completely cooled, wrapping each one individually in aluminium foil and put in plastic bags. When ready to use, defrost, unwrapped, and heat in a preheated 200° C oven for 5 minutes.

600g - all

10g - dry active yeast

15g - sugar

4 - tablespoons extra virgin olive oil

4 - tablespoons freshly parsley, finely minced

2 - tablespoons freshly basil, finely minced

1 - tablespoon freshly marjoram or thyme, finely minced

1 - tablespoon freshly rosemary, finely minced

- white flour to powder

- salt to taste


In a small bowl mix the dry active yeast, the sugar with 1 teacup of lukewarm water and let sit for 15 minutes. In another large bowl pour the flour and mix with the salt, adding gradually the yeast mixture. Bring the dough together with a spoon, then with your hands. It should be soft, smooth but not too sticky or wet. Tip onto a floured work surface and knead for about 10 minutes, or until it's smooth, soft and springs back when pushed with a finger. Put the dough into an oiled large bowl and let it rest for 1 hour 30 minutes ( or until has doubled in size ) in a warm place, covering it with a kitchen towel or a cling film. Lightly grease a large baking hob. After the dough has doubled in size lay it out into a lightly floured surface and knead it with your hands for 3-4 minutes, until smooth and no longer sticky. Give it the form of a ball and divide it into 6 equal small balls and turn them out onto the oiled hob, well-distanced, leaving about 2 inches between each other. Flatten the small dough balls with your hands and spread over their surface the minced herbs and the salt. Sprinkle with the olive oil, cover with a clean towel let rise for 30 minutes. Preheat the oven to 200° C and and bake the herbs focaccine for about 15 minutes, or until golden. Remove from oven, allow to rest for some minutes and serve immediately or later on as a snack, or to accompany your favorite dishes.
