INGREDIENTS


1 - French baguette, cut into 1 inch slices

2 - teacup extra virgin olive oil

1 - 1 teaspoon of sugar

2 - tablespoons of balsamic vinegar

1 - tablespoon of capers or anchovy fillets

1 - tablespoon of pine nuts

1 - tablespoon of crystallised cedar


DIRECTIONS


Cut in half the slices of bread and strip out the crust. Heat a frying pan over medium-high heat and bake the bread until slightly brown. Remove from pan and transfer them to a paper towel until dried. Boil the balsamic vinegar and sugar into 2 tablespoons of water. Add capers / anchovy fillets, pine nuts, the crystallised cedar and tomatoes cut into small pieces. Cook all for about 5 minutes. Spread all into the bread slices and serve immediately
