Ham Croquette Recipe

Ham Croquette Recipe is a perfect choice for an appetizer or snack. You can serve them with abundant freshly green salad and once you serve them at the table you' ll realize what a great entertainment they are.

150g - raw ham, thinly chopped

70g - green olives, thinly chopped

150g - dried bread crumbs

70g - white flour

70g - butter

3 - eggs

2 - cups milk


Melt butter in a large casserole, add the flour and lightly brown for some minutes, stirring continually. Add the boiling milk, season with salt and pepper and cook for about 10 minutes, stirring again and again. Remove the casserole from fire. Thinly chop the ham and the olives. Add them to the white sauce, together with one egg and mix all the ingredients. Transfer the mixture into a large bowl, cover and let rest in the fridge for 30 minutes. Passing this time, remove from fridge and using your hands form as many  golf ball-size balls as you can. In a large bowl beat the remaining eggs, season with salt and pepper and deep balls into eggs mixture. Spread the bread crumbs into a plate and roll the croquettes. Place the balls in hot oil ( BE CAREFUL not to crowd) and fry until golden brown, but not burned. Remove to paper towels to soak up grease and serve warm, or at room temperature with a fresh salad.
