Tuna Stuffed Tomatoes Recipe

Looking for an easy and fresh appetizer recipe to prepare on hot summer days? Try this tasty Tuna StuffedTomatoes Recipe, prepared with fresh tomatoes shells, stuffed with can tuna, mayonnaise, olives, boiled eggs and freshly minced parsley. This plate has the advantage to be prepared in advance and let rest in the fridge until the moment of serving.

4 - red round tomatoes

150g - can tuna, drained well

4 - tablespoons mayonnaise

1 - tablespoon minced olives

- freshly minced parsley

2 - boiled eggs

- extra virgin olive oil

- salt to taste


Clean, wash and pat dry tomatoes with clean kitchen towels. Cut 1/2 inch slice off the top of each tomato, save the tops. Hallow out the the tomatoes by scooping out the seeds and pulp from the tomatoes, lightly salt the cavity and place upside down on paper towels or in a colander to drain for some minutes. Meanwhile, prepare the tuna sauce, boil th eggs, allow to cool, peel, cut into small cubes and place in a bowl. Add mayonnaise, drained tuna, minced olives, freshly minced parsley, 1-2 tablespoons extra virgin olive oil, season with salt if necessary and stir until blended. If sauce appears dry, add a bit more olive oil. With a small spoon fill each tomato with the prepared tuna sauce. Serve immediately or place in the fridge until the moment of serving.
