Greek Yogurt Stuffed Tomatoes Recipe

Greek Yogurt Stuffed Tomatoes Recipe are perfect for an appetizer, a light snack or a quick lunch. In the same way are prepared the stuffed cucumbers, as presented in the photo. Garnished with some olives are beautifully presented into a serving plate.

INGREDIENTS


24 - cherry tomatoes

6 - medium cucumbers

200 g - greek yogurt

50 g - mayonnaise

1 - tablespoon finely chopped green onions


DIRECTIONS


Wash and pat dry tomatoes and cucumbers. Remove stems from tomatoes and cucumbers. Cut a thin slice off the top of each cherry tomato. Scoop out and discard pulp, invert tomatoes into paper towels to drain. Cut cucumbers into 3-4 pieces, discard pulp using a small spoon or melon baller, carefully, leaving 1/8 inch shell and invert onto paper towels to drain. In a bowl, combine greek yogurt, mayonnaise, stir in onions and spread with salt; mix well. Fill cherry tomato and cucumber shells with greek yogurt mixture; place on a serving platter or tray. Cover carefully with a plastic wrap, refrigerate for about 1-2 hours before servings. Decorate with some olives.
