Easy Stuffed Potatoes Recipe

Have you tried any other version to cook potatoes except fried, boiled or roasted? If not try this Easy Stuffed Potatoes Recipe, prepared with ricotta cheese and herbs, but you can prepare them with any other kind of stuffing like, greek yogurt, ham, sausages and the result is always enjoyable. Serve them as an appetizer during a party or a dinner when inviting friends.

5 - medium potatoes

300g - ricotta cheese

50g - Parmesan cheese

- freshly thyme

- freshly origan

- freshly rosemary

- extra virgin olive oil

- freshly ground black pepper to taste

- salt to taste


Place a pot with abundant salted water to a boil. Wash well potatoes with cool water, don' t peel and when water boils add potatoes. Cook for 20-30 minutes, until they' re tender and drain in a colander. Peel carefully as they are hot, paying attention not to burn your hands, cut potatoes in half lenthwise and with a teaspoon or a melon baller scoop out flesh, leaving about a 1/4 inch-thick shell. In a bowl combine flesh, ricotta cheese, minced fresh herbs and season with salt and pepper.Place potatoes in a single layer on a boking sheet, divide mixture into each potato shell, sprinkle with grated Parmesan cheese, drizzle with some extra virgin olive oil and bake in the preheated oven at 200°C for 10 minutes, or until lighlty browned and bubbly. Serve warm.
