INGREDIENTS


12 - freshly Belgian endive leaves

200g - strawberries

2 - tablespoons mascarpone cheese

2 - tablespoons philadelphia cheese

1 - tablespoon cane sugar

- aromatic salt

- extra virgin olive oil

- balsamic vinegar

- salt and pepper to taste

- freshly rocket to garnish


DIRECTIONS


Wash well under cool water the Belgian endive leaves, pat dry with kitchen papers. In a small bowl mix well the two types of cheeses, season with the aromatic salt, or just with a salt-pepper mixture. Clean, wash, pat dry strawberries and chop into small cubes, or place into a mixer and form a kind a puree. Add the cane sugar, season with salt and pepper, sprinkle with the balsamic vinegar and mix well to combine. Arrange in each Belgian endive leaf the same amount of aromatic cheese mixture and top with the prepared strawberry puree. Transfer on a platter and garnish with freshly rocket.
